Hmmmm... Gameplay-wise I'd go with Uncharted 4; it also holds the most emotional depth for me and I personally consider it the best well-written game in the franchise.
But I'll have to go with Among Thieves; other than the fact it holds a very special place in my heart, it was and remains the biggest leap forward in the games. It had everything I could hope: great action, insane and hilariously epic set-pieces, strong characters and I think it's also the best-paced entry in the series; DF dragged on a lot, GA got lost in itself here and there, DD had a fucking terrible pacing, and ATE has a somewhat padded third act.
Four was best at gameplay and had the best story
Two was the best overall package (for its time), but has dated level design and horrible gun sounds
One has dated, repetitive gameplay, but makes up for it with its atmosphere, soundtrack and villains
Three has bad pacing, way too many set pieces and locations, bad level design, the worst gunplay and AI, terrible villains, and all the characters were turned upside down from when we last saw them
Legacy was alright, but had nothing new to bring to the table and felt kinda pointless. Asav was underdeveloped, Nadine was an annoying sidekick, and (spoiler warning) a character from a previous Uncharted game is introduced in the third act , but their personally had been changed to a goofy Disney sidekick
Probably two. I love the Asian setting and the story is flawless.
But I don’t see why three has such a bad rep. I love everything about it, not quite as much as two, but still. The inclusion of the queen’s secret council, Lawrence, drake, it all just fits together nicely for me. I’ll admit, the villain deaths were lacklustre, but I still enjoy watching that old crone drown in sand every time. I enjoy watching my ring go with her a little less. And Ubar, not only the location, but the legend you hear along the way, is fantastic. I really wish it were more explorable.

The thing with Drake's Deception is that while it's a good game - definitely one of the top games of 2011, it suffers from some illogical plot threads and a horrid case of pacing. It leaps and limps between set-pieces and locations without a break, characters that are not Nate or Sully coming and going on the fly, a good case of paddling even with all the varied locations, and the story in itself feels rushed.
It's really the result of the developers coming out with the set-pieces first, the plot second. That, and they wanted justifying some locations and homages to classic films.
With that being said, out of the original trilogy it's my favorite one in terms of gameplay. Its action is damn sweet and I love how important Sully is in this game after being sidelined in Among Thieves.
I just think it made too many wrong decisions. Talbot was one of the only villains in the franchise who had enough screen time, but his (and Marlowe) character(s) were never defined. (Talbot was voiced by Robin Atkin Downes, that should’ve been a win right from the get-go.) Sully went from being Nates wisecracking sidekick to his gotdamn father figure, and the game had so many set pieces that the next two games had to recycle the previous games action scenes. It is still a good game. The voice acting is great, the puzzles are better than before (that’s not saying a lot, though), and it had one of the best soundtracks of the series.
